I don't understand why it is considered acceptable for Exchange to fail. We don't have this sort of trouble in the Notes/Domino environment. Those servers can stay up for years without a reboot or patch if necessary.
That said, given the registry entries and other "difficult-to-backup" and "difficult-to-restore" settings used in exchange, IMHO the only really safe option would be a disk imaging backup solution.
